Tuna Cups (Recipe)

I've gotten some great email feedback about the Shrimp Dogs! So glad everyone is enjoying them. This sneaky little recipe will have your little ones begging for more! Best of all, you can feed your family for a nutritious meal for close to nothing and it has (a few) hidden veggies!

Tasty Tuna Cups

Shopping List:
-2 cans chunk light tuna (in water) drained
-1 can homemade style biscuits (our choice: Pillsbury's new Simply Biscuits)
-1/2 cup of shredded colby jack cheese
-1/4 cup of mayonnaise
-2 tbsp spicy brown mustard
-2 tbsp finely diced celery
-2 tbsp finely diced carrots
-cracked black pepper & salt to taste
-1/2 cup of shredded colby jack* (this 1/2 will be reserved for the tops of each cup)

Directions:
Preheat oven per the biscuits instructions. Lightly grease 10 muffin cups. Gently press one biscuit and form it to the muffin cup. Stir remaining ingredients in a medium bowl until mixed. Be careful not to over stir or your tuna will get creamy instead of flaky. Spoon mixture into biscuit cups. Sprinkle with remaining cheese. Bake according to biscuits instructions.

Vaccine Questions

We thought hard about how to vaccinate Evan, our youngest. Vaccinating him was a definite. But did we want to follow the AAP (American Academy of Pediatric) guideline and recommendation? Or, did we want to follow Dr. Sears? OR, did we want to break up the combined shots, like MMR into 3 separate shots. In the end, after lots and lots and lots of talking with our pediatrician we decided to swallow our lack of faith in the CDC and follow the regular guidelines, after all our other boys are fine.

Well, my husband had an excellent thought during all of this pondering. I meant to tell you 4 months ago but mommy brain sucked that thought right out of my head. With Evan's 9 month well check coming up in a month it flashed back into my memory.

If you break the combo vaccinations into separate shots wouldn't you just be giving your child even more of the preservatives that most people are trying to avoid?

Instead of 1 shot with the preservatives, you're giving them 3 shots with preservatives. I honestly haven't researched into vaccines enough one way or the other. But, just wanted to throw that food for thought out for a snack.

Gorgeously Green Discussion Part 1 (Book Club)

Are you loving this book or what?!? I'd love to hear some feedback. I hope you've all enjoyed Steps 1 -4 of Gorgeously Green and that you are finding out how easy Sophia Uliano's steps are to follow! Now, let's get to the good stuff... the steps!


Step 1: Becoming Aware
I have a feeling that most of you are already "aware" to some level or your probably wouldn't be reading my blog. :) Did Gorgeously Green Step 1 make you aware of something new? If so, have you made a change to implement that in your life?

Step 2: Green Goddess
Beauty products are probably one of the most commonly misunderstood products on the market. There are so many daily beauty rituals that people follow to keep their skin and bodies looking their best and even more products to complete those rituals! How many toxic products were stow aways in your family's routine? (p.s. How about that nail polish?! Any nail biters out there? I am!)
Step 3: Your Green Temple
This is one of my favorite chapters! I love that Gorgeously Green does more than just urge you to get out of the gym and buff up at home instead. Just think of the time, energy, gas, and money you can save! Most of all, I love that there's a yoga and fitness program ready to go in this chapter. Who has tried it?? Who wants to?

Step 4: Soulful Shopping
And this chapter is where the giveaway comes into play! A lot of waste is produced every day shopping. There are simple easy changes you can make in your shopping trip to reduce waste and Sophie Uliano shows us how! Philosphy of Milk, by Owen, age 4

I had the following conversation with my 4 year old son during breakfast.

Owen: Mom, do goats make milk?
Me: Yep, they sure do.
Owen: Is that where the milk in my cereal came from?
Me: No, that's cow milk.
Owen: Do we drink goat milk?
Me: No, but sometimes we have goat cheese.
Owen: Oh. Do sheep make milk?
Me: Yep, sure do.
Owen: Do we drink sheep milk?
Me: Nope. Only lambs drink sheep milk.
Owen: Do pigs make milk?
Me: Yes, honey. And horses, and cats, and dogs, and lots of other animals called mammals.
Owen: But we don't drink that milk?
Me: No, just their babies do.
---Several minutes pass---
Owen: Mom, do you share your mommy milk with the cows?
Me: Nope. Just Evan gets mommy's milk.
Owen: Well, if you're not going to share with the cows then we shouldn't drink their milk. It's not nice.
Me: Yep. You're probably right.
